Rum Agricole
Also known as Rhum Agricole, is a type of Rum made principally in the French territories of the Caribbean Islands and Southwest Indian Ocean Islands. The island of Martinique in the Caribbean is the only region in the world to have an AOC or Appellation d'Origine Contrôlée mark in the rum industry.
The Elaboration Process
Rum Agricole is fermented from pure, fresh cane juice which is collected only when the sugar cane crop is at the peak of maturity, and placed in large vats to make a sugar cane wine, called vesou, after that it's distilled in single-column stills to about 70% alcohol, which is less than most molasses-based rum, allowing this Rum to retain more of the original flavor of the full cane juice.
Types of Rum Agricole
The lighter Rums Agricole are rested fro up to 6 months before being bottled as Rum Blanc or White Rum.
The mature Rums Agricole are aged in oak barrels for years, labelled as follows:
Rhum Vieux: three years aging
Vintage Rhum: such as wines in France, some Rhums are bottled as vintages, which have 10 years or so aged in oak before being bottled.

45-75% (90 to 150 proof)
