Aam Ka Pannah

Aam Ka Pannah is a hindi fruit drink made from green unripe mangoes (mango= "aam"). It is made when mangos are still green in two different ways: while it is raw and by cooking it. Its taste is sweet sour and it is ingredient of some Hindi cocktails.

It is a special summer drink and to make it you take some green unripe mangoes and boil them until soft. Peel the skin and take the pulp out in a pan. Mash it very well to make a clean smooth paste, removing the threads if there are any. Then store this pulp in the refrigerator. To make a drink out of it, take two spoons of pulp into a glass of water. Add sugar to taste and stir.

Aloe Vera Juice

Aloe Vera juice is made from freshly cut and hand squeezed Aloe Vera leaves, and prepared from the pure inner gel of mature Aloe Vera plants.

Barley Water

It's a popular British soft drink made by boiling washed pearl barley, straining, then pouring hot water over the rind or pulp of the fruit, and adding fruit juice (usually lemon or other fruit), and sugar. 

 

Bitter Lemon

Bitter lemon is tonic water flavoured with lemon. It contains quinine, which is the bitter agent of this soft drink. This carbonated drink is produced by many companies around the world, but the most common is: Schweppes.

Bottled Lemon Juice

Made from concentrated lemon juice, it's easy to find at any supermarket.

Calpis

Calpis is a Japanese soft drink, it has a light milky acid flavor. There are many types of fruit flavored variations.

 

Carrot Juice

Healthy drink made by processing peeled carrots into a juice.

Chaas

Chaas is a Hindi spiced buttermilk made from curds, cumin, chilli ginger paste and sanchal or black salt.

Chocolate Cream

Ingredients:

  • 20 cl Cream
  • 10 cl Milk
  • 150 gr Black Chocolate chopped

Preparation:

Put cream and milk in a saucepan. Bring both to a boil. Pour this into a bowl with the cholate pieces. Stir until chocolate get melted into the cream and milk.

Chocolate Milk

Sweetened cocoa-flavored milk drink. It also comes as powdered instant chocolate, which you mix with hot water or milk and it's done. E.g. Swiss Miss®

Clam Juice

Strained liquid of shucked clams, has a refreshing briny flavor, and it's sold bottled in most food stores. 

 

Clamato Juice

Clamato juice is also known as tomato clam juice. It is a drink made primarily of reconstituted tomato juice concentrate and reconstituted dried clam broth with a dash of high fructose corn syrup. It was originally invented by Duffy Mott and now it is mainly produced by Mott's Inc.

Clamato is a popular mixer for American and Canadian beer. It is also used as a base for Bloody Caesar cocktail invented in Canada.

Club Soda or Soda Water

Club Soda is water that has been charged with carbon dioxide. Club soda is used as a synonym for soda water but contains a small amount of salt for flavor.

Depending on the place you are, club soda might have different names but still you can use the following for any case:

Club Soda, Soda Water, Carbonated Water, Sparkling Water, Seltzer Water, Mineral Water (with gas), etc.

Collins Mix

A liquid additive made of a citrus blend of lemon, lime and grapefruit, for the making of the classic Tom Collins cocktail.

Hot Chocolate

Also known as hot cocoa is a drinking way of chocolate that consists on heating milk together with cocoa powder, milk or/and water, and sugar. This delicious beverage can be drunk hot or cold.

Coconut Milk/Cream

Coconut milk or coconut cream is not the juice found inside a coconut, but the diluted cream pressed out from the thick, white flesh of a well-matured coconut.

To make coconut milk, finely grated coconut meat is steeped in hot water until it is cool enough to handle. It is then squeezed until dry; the white fluid is strained to remove all the pulp. When allowed to sit for a while, the coconut cream rises to the top. Commercially, coconut cream is obtained by pressing grated coconut flesh by itself without water, using a specialized, heavy piece of machinery.

More hot water is added to the pulp and the process is repeated to yield a lighter fluid, or coconut milk. Frequently, a third pressing is done to obtain a light coconut milk, which is used for stewing meats or for thinning coconut milk to make a coconut soup or a light curry. An average mature coconut yields about one cup of coconut cream and one to two cups of coconut milk depending on how light a milk is desired.

Cola

Cola is a sweet carbonated drink colored with caramel that contains caffeine. It may be sweetened with sugar, corn syrup or any artificial sweetener.

It is sold worldwide and comes in different variants and flavors: lemon, vanilla, light, non caffeine, cherry, with or without calories, etc.

The most famous cola brands are: COCA-COLA, PEPSI, and the unique DR. PEPPER.

Cream

Cream is a derived product from milk, it is used on many of our cocktails either for decoration puroposes or as a base of the drink.

Types of Cream:

  • Half and Half (half cream half milk): 10.5 to 18% fat
  • Light, coffee, or table cream: 18 to 30% fat
  • Medium cream: 25% fat
  • Whipping or light whipping cream: 30 to 36% fat
  • Heavy whipping cream: 36% or more
  • Extra-heavy or manufacturer's cream: 38–40% or more, generally not available at retail.

Curd

Curd is the part of the milk which coagulates when any acid agent is added such as lemon juice and then heat is applied.

Eggnog

Besides being a cocktail, Eggnog is also a non-alcoholic blend of cream, sugar and eggs commonly flavored with vanilla extract. It's used as a mixer in cocktails and can also be added to coffee. Eg. Hood® Vanilla EggNog

 

Elderflower Cordial

It is a dilution drink made from elderflowers, very popular in England during summer time. You can find it at the markets or you can make it at home.

Recipe

Ingredients:

20 elderflower heads;
1 lemon (sliced);
2tsp citric acid;
3 1/2lb sugar;
2 1/2 pints boiling water.

Instructions:

Put all the dry ingredients into a clean pan. Pour boiling water over. Stir until sugar is dissolved. Skim. Cover with a cloth or lid. Stir twice daily for five days. Strain through muslin and bottle in clean sterile bottles. The cordial can be frozen in plastic bottles (leave space for expansion). Fresh cordial can be refrigerated for up to two weeks. Dilute with water, sparkling mineral water or lemonade and serve with slices of lemon and sprigs of mint. Add gin and soda water, or vodka. Make diluted Elderflower Cordial into a delicately refreshing sorbet or any other drink that requires of this ingredient.

Energy Drinks

Energy drinks are non alcoholic drinks that are designed to give the consumer a burst of energy by using a combination of methylxanthines, B vitamins and herbal ingredients. As ingredients include: caffeine, guarana, taurine, ginseng, and other forms with high levels of sugar and stimulant ingredients. E.g. Red Bull®

Fruit Juices

Ginger Ale

Ginger Ale is a soft drink flavored with ginger that is very popular in mixed drinks. Ginger ales come in two varieties: golden ginger ale and dry ginger ale.

Popular brands are: Canada Dry, Schweppes, Vernors, C&C, etc.

Ginger Beer

Ginger beer is a carbonated soft drink flavored with ginger, lemon, and sugar. It was originated in England during the mid 1700s. Its original recipe requires ginger, sugar and water, and a gelatinous substance called ginger beer plant. Nowadays it is made with yeast to give the drink its fizzy character. Popular cocktail made with ginger beer: Moscow Mule.

Green Mango Frooti

Green Mango Frooti is a Hindi brand of mango juice. It is used as ingredients for some of their refreshing cocktails.

Guarana Drink

Guarana champagne is a typical product from Brazil. It is a drink made with the red fruits of the plant called guarana.

Half and Half

American "half-and-half" is a commercially prepared dairy product that is half whole milk and half cream. That's single cream,

For one cup of half-and-half, use 1/2 cup whole milk and 1/2 cup single cream.

Herbal Infusion

Or known as herbal tea, are bags of caffeine-free aromatic herbs that have been dried for using as an infusion in hot water. They're considered helpful for relieving some medical conditions, such as nerves, stress, stomach problems, etc. E.g. Camomile Tea, Lemon Grass Tea, and a wide variety of combinations. E.g. Ice Tea

Ice tea is a form of cold tea sweetened or unsweetened. Generally it comes prepackaged or unprepared (powder to be mixed with water) in different flavors, being the most common lemon and others such as peach, lime, cherry, and raspberry. Ice tea can also be available carbonated in some countries. However for most of the cocktails recipes you may use the lemon flavored prepared ice tea.

It is a New Zealander brand of juices made half fruit juice and half lemonade. They have plenty of flavors varieties and the one we use to make cocktails here is: Just Juice Bubbles Mandarin Passion Fruit.

Lassi

Lassi is a popular drink in South Asian countries, made by blending yogurt with water or milk and spices. 

 

Lemonade

Lemonade is a worldwide popular soft drink, especially as a sweet lemon flavored drink. Depending on the country of its origin, lemonade gets different ingredients or it is a completely different drink.

In most of the countries such as USA, England, Australia, etc; Lemonade is a lemon based drink. Consumed as a soda or as a natural fresh juice drink, it is the perfect ingredient for most cocktail recipes.

In The Netherlands, lemonade refers to a fruit concentrate cordial that is diluted with water. It comes in different flavors.

Lemonade is available everywhere, the most popular brands are: Mountain Dew, Schweppes, etc.

Maraschino Cherry Juice

It's actually the syrup in the bottle that comes with the Maraschino cherries.

Margarita Mix

The fastest way to enjoy a Margarita, it's a liquid additive flavored with Triple Sec and lemon or lime juice. You mix this with Tequila and ice, and cheers!

Milk

Opaque, white fluid, rich in fat and protein, belongs to the dairy products.

 

Nectar

A mixture of fruits juice/puree or concentrated fruits juice/puree, sugar and water. E.g. Peach Nectar, Orange Nectar, Pineapple Nectar, Mango Nectar, Apple Nectar, Apricot Nectar, etc.

Olives Juice

Pepto-Bismol

Pepto-Bismol is a liquid formula with a wintergreen taste that relieves heartburn, indigestion, upset stomach, nausea, and diarrhea. Available in every drugstore.

Piña Colada Mix

Piña Colada Mix is a blend of pineapple juice and creamed coconut. In addition to the world famous Piña Colada Cocktail, this mix can be used for a host of additional refreshing concoctions.

Rooh Afza

Very popular sherbet made by Hamdard Labs in India and a very well kept secret recipe. Used widely in flavoring sweets, ice creams, milk shakes, and summer cooler. Off late it is also finding acceptance as a cocktail mixer.

Root Beer

Root beer is an effervescent beverage brewed using extract of the roots and bark of certain plants such as sassafras. It's very popular in North America and it comes in different varieties: alcoholic and soft drink, flavored with vanilla, cherry, cinnamon, etc.

Rosehip Soup

Rose hip soup is a drink that comes from rose hip, the ripe reddish orange fruit of the rose. Flesh of the hip is used to make jellies, jams, and purees, preserves, syrups, fruit soups, tea, wine and health drinks.

Rose hip Soup Recipe

Ingredients:

  • 200 ml dried rose hips
  • 500 ml water
  • 100 ml sugar
  • 2 tbsp clear, runny honey
  • 1/2 vanilla bean

Preparation:

Place the dry rose hips in a strainer and rinse with cold water. Strain the hips and remove any twigs or grit that may be present. Pour the hips in a bowl and pour over the cold water. Cover and place in the refrigerator to soak it overnight. Pour rose hips with their water in a saucepan. Add the sugar and the vanilla bean half, slit open lengthwise. Bring mixture to a boil and simmer on medium heat for about 2 or 3 minutes or until rose hips get very soft. Remove the vanilla bean pieces. Puree the mixture with a blender after cooling down. Strain and push the puree through a sieve and mix in the honey. If the soup seems too thick, pour water to dilute.

Like this you can use it for cocktails otherwise serve soup chilled on deep plates topped with whipped cream or ice cream and crushed biscuits.

Rose Water

Also known as Roses Syrup.

Rose's Lime Cordial Mixer

Rose's Lime Cordial Mixer, or simply Rose's is a brand of a sweetened lime juice produced in Edinburgh, Scotland. In 1876 Lauchlin Rose patented this method of preserving lime juice without adding alcohol.

This lime juice is not fresh lime juice, since it is way too sweeter. It is an important ingredients for the cocktail called Gimlet.

Tea

 

Tea by definition is an aromatic, slightly bitter beverage made by steeping tea leaves in boiling water. These leaves come from an evergreen shrub or small tree called 'Camellia Sinensis' native from eastern Asia. This popular drink is consumed around the world either purely brewed or flavored with fruits, spices, etc.

The most popular types are:

These types of tea are distinguished by the processing they undergo: oxidation, chlorophyll, tannins producing technique.

Tonic Water

Tonic water is a carbonated water flavored with fruit extracts, sugar and quinine. It is also known as Indian Tonic Water or just Tonic.

The flavoring agent quinine is a bitter alkaloid from the bark of the cinchona tree. It is used as the base flavor in most bitters, and is also used in the treatment of malaria. Tonic water glows under ultraviolet light due to the quinine.

Tonic water is used as a mixer for cocktails, especially with gin to make the famous gin and tonic drink.

Kola Tonic

It is a generic sweet syrup made with the Kola nut, and various spices. It's known for being a natural stimulant with the same effects of caffeine. Common brands: Claytons and Rose's.

 

V8 Juice

V-8 is an American product, trademark for a worldwide sold vegetable juice mainly made from tomato and other seven vegetables juices: beets, carrots, celery, watercress, spinach, parsley and lettuce. It is popular in making Bloody Mary's and cocktails with an accentuated veggie flavor.

Water

Water used in the elaboration of cocktails has to be purified, even for mixed drinks it is recommendable to use bottled water. 

Yogurt

Yogurt is a fermented milk product produced by adding to milk a starter of active yogurt containing a mixed culture of lactobacillus bulgaricus and streptococcus thermophilus. This fermentation produces lactic acid, which gives the milk protein its texture, and tart flavor. Yogurt is consumed world-wide since thousands of years, nowadays, it's available in many different styles, as well as in many different flavors. E.g. strawberry yogurt, plain yogurt, hazelnut yogurt, etc.
