Fruit Juices

Acerola Juice

Juice made with the acerola fruit. 

Apple Juice

Apple Juice as it is known is made from apples. For your cocktails use any apple juice available in the market.

Apricot Juice

Apricot Juice is commonly found in supermarkets bottled or as concentrates.

Banana Juice

Extracted banana juice, easier to find at the market than to make it by yourself. 

Bilberry Juice

Juice made from the edible fruit of the same name. Bilberry is commonly found in the wild and it's base for liqueurs, and as flavoring agent for drinks. Also known as mirtillo.

Black Currant Juice

Juice made of black currants. Available at any market.

Blackberry Juice

Juice made of blackberries.

Blueberry Juice

Very dark purple colored juice, made by pressing blueberries. Available at any food store.

Cashew Juice

Juice made in Brazil with the cashew fruit. 


Cherry Juice

Cherry Juice is obtained from cherries concentrated. Available at any market.

Coconut Water (Juice)

Coconut Water is a very popular refreshing drinks in all tropical weather countries. It is obtained by opening a coconut wether it is tender (green) or mature (brown). Green coconut water is recommended to prepare drinks and cocktails. It can be found in the market.

Cranberry Juice

It is the juice of cranberries, diluted and sweetened. It is available at any food store.

Elderberry Juice

It's the juice made of elderberries, small and dark berries that grow in clusters on elder trees. In order to make juiced you need to remove the stems, place them in a pot, fill with water, bring to a boil and let stand over night. Strain the juice into containers and use.

Fruit Punch

A mix of different fruits juices such as Hawaiian Punch or flavored drinks such as Kool-Aid and Gatorade. It does not contain alcohol, and they are used as drink mixers in cocktails.


Goji Juice

Juice made with dried goji berries.

Grape Juice

Grape Juice is obtained from crushed grapes. It is available at any market.

Grapefruit Juice

Grapefruit Juice is the juice extracted from grapefruits with lots of vitamins. It can be pink or ruby and light yellow. In order to make grapefruit juice you need to get fresh grapefruits, bring them to room temperature and roll them on the counter pressing down with your hand. Easy to squeeze now you can use the grapefruit squeezer and extract your juice.

Guanabana Juice

Juice made with the tropical fruit called guanabana or soursop, which is muddle and sieved through a strainer in order to remove seeds and then blended with water and sugar.

Guava Juice

Guava is a small apple sized, oval or round, yellow or green exotic fruit. It has a refreshing tart taste that surrounds a soft pulp containing numerous seeds. Its juice can be home-made by blending the boiled fruit with peel and water and then strained to obtain a thick nectar otherwise you can always find it at the market.

Kiwi Juice

Juice produced by squeezing or crushing kiwis. It can also be found as concentrate.

Lemon Juice

Lemon Juice is also an important juice in a bar. In order to make lemon juice you need to get fresh lemons, bring them to room temperature and roll them on the counter pressing down with your hand. Easy to squeeze now you can use the lemon squeezer and get your juice. A medium sized lemon has about 1 1/2 oz of juice.


Use always fresh juice to make cocktails!!!

Lime Juice

Lime juice is one of the most important juices in a bar. If it's not possible to use fresh squeezed lime juice, only the best-quality bottled juice should be used.

How to make Lime Juice for cocktails:

To get the most juice from a lime bring it to room temperature, then roll it on the counter with the flat of your hand while pressing down on the fruit to soften them up before squeezing. Cut in two and use the lemon squeezer to extract the most juice possible. A medium sized lime has about 1 oz. of juice.

Important: Use only fresh lime juice!!! That will give your drink the original and proper flavor it must have.

Lychee Juice

Juice obtained by blending or squeezing peeled-pitted lychees. 

Mandarin Juice

Juice extracted from mandarin oranges.

Mango Juice

Made of the pure mango pulp, it's a sweet juice by nature, available at any food store. Same category: mango nectar.

Orange Juice

Orange juice is one of the most important ingredients to have when making cocktails.

To get the most juice from an orange bring it to room temperature, then roll it on the counter with the flat of your hand while pressing down on the fruit to soften them up before squeezing. Another method is to put the whole orange in the microwave on high power for 30 seconds. Let stand for 2 minutes before cutting and squeezing.

Use an orange squeezer to extract the juice, once squeezed the vitamin C dissipates and the taste deteriorates, therefore orange juice should always be fresh squeezed.

This goes for blood oranges as well.

Orange-Mango Juice

Blend of orange and mango juices, it's available bottled as from concentrate, however if you want to make it yourself, it's easy, blend together 4 peeled, seedless oranges and 1 fresh mango, pulp only. Strain into a jar and presto... orange-mango juice!.

Papaya Juice

Juice made with the pulp of papaya fruit, thick and sweet. Easy to make in a blender: peel the papaya, remove seeds, and blend.

Passion Fruit Juice

Passion fruit juice is a good source vitamin C and vitamin A. It is rich-flavored and strongly, but pleasantly aromatic. It is available at any market. If you want to make it by yourself you will need:
Passion Fruit
Instructions:Wash the passion fruits, cut them in two, remove pulp with seeds, pass it through a sieve, trying to muddle a little bit so you force liquid to come through into a container. You will need a lot of fruit if you need a lot of juice. Finally mix this pure fruit juice with some water tasting its strength. And there you go, passion fruit juice. Add sugar if you wish.


Passion-Grapefruit Juice

Blend of equal parts passion fruit juice and grapefruit juice. Also available in concentrate.

Peach Juice

A sweet blend of fresh peaches, and water. 

Pear Juice

You can find it in the supermarket, but if you want to make it yourself, it's actually a very easy process: remove stems and seeds, place pieces of pear into a pan and add water until covered. Bring to a boil and then remove from heat, once the pear has cooled to room temperature, pour off all of the juice through a strainer into a container. Chill it in the fridge and use it when you need it.

Pineapple Juice

Pineapple Juice is the juice extracted from pineapples. It is sold unsweetened and sweetened in cans or bottles and as frozen concentrate, and used in many drink recipes, from ordinary mixed drinks to high proof punches. The best way to use it is by making fresh juice. If you are lucky and can find pineapples this is a recipe you can try:

Pure Pineapple Juice


  • 1 Whole Pineapple
  • 1 Pinch of Sugar (optional) 


Peel pineapple completely. Chop it in pieces and blend it in a blender or processor. A pinch of sugar is optional only. Use inmediately in your cocktail or any recipe.

Pomegranate Juice

Juice made from the pomegranate fruit. It's used in cocktails as a fresh juice and as concentrated syrup: grenadine syrup.


1 Pomegranate

1 cup Water

Sugar (to taste)


Cut open a pomegranate and submerge into a large bowl filled with water. Put your pomegranate into the bowl and remove seeds underwater, the seeds will sink to the bottom, while the yellow membrane will float. Discard peel and membranes. Strain water and then put into a blender. Run your blender until seeds are broken up. Place a cheese cloth over a bowl and pour seed mixture through. Press the pulp to extract as much juice as possible. Add sugar to taste and it's ready to use.

Raspberry Juice

It's a dark red juice obtained by crushing raspberries and sugar. It's available at any grocery shop or you can also find it in concentrate.


Strawberry Juice

Strawberry Juice is a fruit juice made from strawberries. It is also a concentrate that is often added to cocktails. Available at any groceries shop.

Sugarcane Juice

Sugarcane juice also known as 'guarapo' in Southamerica, is a very popular drink in countries that grow sugar cane. It's obtained by pressing freshly harvested stalks. The sugar cane juice can then be sold in plastic bags or cups as a refreshing beverage.

Tamarind Juice


Tamarind refers to the fruit of the Tamarindus Indica, unlike lemons, limes or oranges that need to be cut and squeezed, the traditional way of extracting tamarind juice is to peel it and boil it in water and to mash the fruits, to squeeze the pulp and to remove seeds. This is not difficult but it actually takes time so most of people rather use tamarind paste in jars or bags available at any market and mix it with water to obtain juice.

Tangerine Juice

Citrus juice made squeezing fresh tangerines.

Tomato Juice

Tomato juice is a juice made from squeezed tomatoes. It is available at any market pure, or with salt added. This is a popular ingredient for cocktails such as Bloody Mary.
