Blend and strain

 

Ingredients:

 

½ cup Coconut Milk

½ cup Coconut puree meat

4 oz Coconut Rum

4 oz Dark Rum

1 oz Lime Juice

1 oz Cointreau

½ cup Pineapple Juice

14 Tamarind Juice

5 – 6 Ice Cubes

 

Instructions:

Combine the coarse coconut puree or cream and coconut milk, with pineapple, lime, tamarind juices along with ice cubes in the electric blender. Blend at high speed for a minute adding both of the rums and liqueur. Strain into lowball glasses and garnish with pineapple wedge.(Serves: 6)
